Introduction

Almond consumption dates back to biblical times they are even mentioned in the Old Testament around 100 A.D. the ancient roman’s showered newlyweds with almond. This ritual came from the belief that they increased fertility. But today it’s the nutrition value of almonds that increase its demand. Almond is guilt free snack which contains vitamins, minerals, and protein in a very good amount. California is a larger almond producer more than 80% of the world’s almond come from there where growing conditions are ideal. There are two varieties of almonds sweet almond and bitter almond. Sweet almonds are edible type consumed as nuts and used for cooking. The oil of bitter almonds is used in the manufacture of flavoring extracts for foods and liqueurs, though prussic acid must first be removed. Almonds may be eaten raw, blanched, or roasted and are commonly used in confectionery baking.
